KNOWING THE FLAVORS – Freshwater fish
The third event in the "Knowing Flavors" series explores a vital element of our region: the ecosystem of Cuneo's rivers and lakes, through its inhabitants: freshwater fish. In an era where sustainability is paramount, this meeting offers the opportunity to rediscover local species that are often overlooked, yet crucial to the balance of our biodiversity.
The event will feature DiSAFA university professors, nutritionists, tasting associations, and local trout farmers. Together, we will analyze the nutritional properties of these foods, sustainable farming techniques, and the organoleptic characteristics that make the fish from our waters a healthy and locally sourced delicacy.
For the FAI Cuneo Delegation, protecting the landscape inevitably involves protecting its waters. Developing a new awareness of what our rivers offer is the first step towards transforming every citizen into an active custodian of the natural environment around us.
The initiative is organized in collaboration with the Department of Agricultural, Forestry, and Food Sciences (DiSAFA) of the University of Turin and the Interdepartmental Center for Food and Anti-Fraud Research (CIBAN).
